Realistic Meal Prep for Moms With No Time (and Picky Teens)

If your weeknights feel like survival mode, you’re not alone. Between school meltdowns, therapy appointments, and last-minute homework battles, making a fresh dinner every night just isn't happening in my house. That’s why Sunday meal prep saves me.

I’m not talking about cooking 15 meals in a day. I mean a few smart, simple moves that set us up for a smoother week. Here’s what I actually do — and some of the affordable tools I use.

1. Pre-Chop Veggies (with Help From a Food Chopper)

I used to skip veggies because I didn’t want to deal with all the peeling and chopping. Now, I use this manual food chopper — no electricity, easy to clean, and my teen actually likes using it (bonus sensory input, honestly).

2. Batch Cook a Protein (and Freeze Half)

Ground turkey or chicken is my go-to. I cook up a big batch in this non-stick skillet, season half for tacos, and freeze the rest for later in the week. One mess, two meals. Yes, please.

Bonus: Clean up is SUPER quick with this pan.

3. Portion Everything in Stackable Glass Containers

These glass meal prep containers are a lifesaver. They're microwave-safe, don’t stain, and the divided sections are perfect for picky eaters who “don’t want stuff touching.”

4. Label It or Forget It

My ADHD brain forgets what I prepped by Tuesday. These reusable labels stick to everything, wipe off clean, and help us both remember what’s what.

5. Protein Shakes = Breakfast Solved

Breakfast is hard. These whey protein shake powders are teen-approved and blend easily in this portable blender that charges by USB.

Final Thoughts

Meal prep doesn’t have to be Instagram-perfect. If it saves you stress and helps your teen get through the week with fewer meltdowns and more fuel — that’s a win.
